Let’s talk about parfaits, shall we? Fruit, yogurt, and granola. The perfect breakfast. I love the combinations of sweet and tangy, crunchy and creamy. Its delicious, easy and healthy. A real win-win… win. To start you’ll need some good granola. For parfaits I prefer a simple honey-oat granola, which I’ve supplied the recipe for at the end of this post. Feel free to adjust it to your own tastes though!
For my parfait I simply spooned about a 1/4-1/2 cup of Silk Soy Yogurt (plain flavored) into the bottom of a glass. Then drop in a handful of berries ( I used blueberries) and them add about a 1/8-1/4 cup of granola. Repeat these layers once more then stand back and marvel at the gorgeous treat you just created:
4 1/2 c. rolled oats
3/4 c. wheat germ
2 c. whole wheat flour
1/3 c. oil (I used applesauce)
1 1/4 c. honey
1 tsp. salt
2 tbsp. raw or brown sugar
1 tsp. vanilla
I forgot to photograph the vanilla… I always forget an ingredient. I blame it on the heat.
Mix all ingredients together.
Spread it out on a baking sheet and bake at 250 degrees for 30 minutes. Stir after 15 minutes. Increase temperature to 325 degrees. Stir and cook for an additional 10 minutes.
Once its done baking, let it sit until its cool enough to hand. Then, using your hands, break apart any large chunks.
Once it’s completely cool, store it in an airtight bag.
