Ferris Bueller Banana Muffins

“Why are these Ferris Bueller muffins,” you ask? Because they are soooo choice! If you have the means, I highly recommend picking one up 

I’m on a muffin kick apparently, and the Hummingbird Bakery cookbook is fueling my habit. I have a collection of brown bananas  piled up it my freezer and as gross as they look they are actually PERFECT for banana muffins or banana bread…  Just pop them in the microwave for about 45 seconds, peel, and mash away.

Ingredients:

  • 2 2/3 c. all purpose flour
  • 3/4 t. salt
  • 1 1/2 t. baking powder
  • 1/2 t. baking soda
  • 2 t. ground cinnamon plus more for sprinkling
  • 3/4 c. sugar plus more for sprinkling
  • 1 1/2 c. buttermilk
  • 1 egg
  • 1/2 t. vanilla extract
  • 5 T. unsalted butter, melted
  • 1 3/4 c. mashed banana

Put flour, sugar, salt, baking powder, baking soda, and cinnamon in a large bowl and mix until combined.

In a separate bowl mix together buttermilk, vanilla and egg.

Slowly pour the milk mixture into the flour mixture and beat on slow speed until just incorporated.

Pour in the melted butter.

Then stir in the bananas with a wooden spoon until just combined.

Spoon the batter into paper cups until two-thirds full, then sprinkle with sugar and cinnamon. Bake at 325 degrees for 20-30 minutes (or until toothpick inserted into muffin comes out clean). Let them cool slightly in the pan before transferring to a wire rack.

Now just sit back… Relax…. Have a muffin and a cup of tea… Maybe put on that old Wayne Newton record you have hidden in the top of your closet… and enjoy.
