“Make Tina Proud” Blueberry Muffins

Have you ever spent time making something, wether it be cooking a lasagna or baking peanut-butter cookies, and just as you take that first bite Tina Turner pops into your head singing simply the best…? Well if you don’t have a Tina Turner moment after baking these then I’m gonna assume you’re not of sound mind.

Ingredients:

2 3/4 c. all purpose flour
1 3/4 c. sugar
1 tsp salt
1 ½ tsp baking powder
½ baking soda
1 1/2 c. buttermilk
1 egg
½ tsp vanilla extract
5 tbsp unsalted butter, melted
1 pint blueberries
Preheat oven to 170C / 325F.
Line a 12-hole muffin tin with paper cases.

First you will put the baking soda, baking powder, salt, sugar, and flour into a bowl and mix together until combined.

Next you will put the buttermilk, egg, and vanilla into a bowl and mix to combine.

Slowly incorporate the milk mixture into the flour mixture. Then, pour in the melted butter and mix until smooth.

Lastly, gently fold in the blueberries with  a wooden spoon until evenly dispersed.

Spoon the batter into paper baking cups until two-thirds full (I like to spray the cups lightly with nonstick cooking spray first just to keep the paper from sticking). Resist licking the spoon until all cups are filled!

Bake for 20-25 minutes, let them cool on a wire rack, then ENJOY as Tina Turner serenades you…  YOU’RE SIMPLY THE BEEEEEST! BETTER THAN AAALL THE REST!

Blueberry Muffins – The Hummingbird Bakery Cookbook
2 3/4 c. all purpose flour
1 3/4 c. sugar
1 tsp salt
1 ½ tsp baking powder
½ baking soda
1 1/2 c. buttermilk
1 egg
½ tsp vanilla extract
5 tbsp unsalted butter, melted
1 pint blueberries
Preheat oven to 170C / 325F.
Line a 12-hole muffin tin with paper cases.
Put the flour, sugar, salt, baking powder and baking soda in an electric mixer with the paddle attachment or in a large bowl and use an electric mixer or a hand whisk and beat.
Pour in the buttermilk, egg and vanilla extract into a separate bowl and mix to combine. Slowly pour into the flour mixture and beat until all the ingredients are incorporated.
Pour in the melted butter and beat until the butter is just incorporated, then beat until the batter is even and smooth.
Finally, gently fold in the blueberries with a wooden spoon until evenly dispersed.
Spoon the mixture into the paper cases until two-thirds full and bake in the preheated oven for 20-25 minutes, or until golden brown and the sponge bounces back when touched. A skewer inserted in the centre should come out clean. Leave the muffins to cool slightly in the tray before turning out onto a wire cooling rack to cool completely.
