I recently made granola bars for Spen and myself as part of my New Years resolution to cook more meals at home. This all stems from watching a few incredibly scary documentaries about food (all courtesy of our Netflix queue)…. but I’ll save that for a different post.
I used the Barefoot Contessa’s recipe as a base for my bars. I basically followed her recipe verbatim aside from these few small changes:
- Instead of wheat germ I used flour. I have nothing against wheat germ, I was just trying to use up things in my pantry without purchasing anything else.
- I added a small amount (1tsp) of molasses to the honey mixture to add some more flavor.
- Instead of cranberries and apricots I used raisins and dates (again, trying to clear out the pantry).
The toasted coconut really makes these granola bars. I’d love to try some different combinations!
